RESPONSIBILITIES

:Direct, coordinate and participate in food preparation, mainly for dining room but not limited to banquetsMaintain food production to business levels and monitor work performance. Direct and coordinate activities of culinary crew.Plan and price dining room menu items with assistance from food and beverage controller and management team; taking into account such factors as seasonal availability of ingredients and the business volumesAssist food and beverage controller with food cost controls, food tracking and inventories to ensure budgeted food costsAssist with ordering of supplies. Participate in the verification of all purchases to ensure quality and account for each delivered item.Comply with nutrition and sanitation regulations and safety standards and ensure that crew is responsible for the same.Assist with recruitment and scheduling according to business and projected goals for labour budget.Responsible for the management, training, coaching and mentoring of kitchen crew.Foster a climate of cooperation and respect between co-workersPlan and conduct period/monthly meeting with culinary and stewarding team.Meet with customers to discuss for special occasions and special needs.Attend and participate actively in all required meetings.Maintain and develop proactive relationships with partners, schools, suppliers and accountsAttend and participate in any industry trade shows as required.Any other duties as assigned

EXPERIENCE, SKILLS & EDUCATIONAL REQUIREMENTS:

Diploma or equivalent from an accredited culinary program Minimum 5 years experience in a similar environment Red Seal Certification required Previous experience managing, coaching and mentoring a team Financial acumen Excellent knowledge of Hot Line, Restaurant and Banquet production Excellent knowledge of kitchen safety standards and procedures Excellent communication and organizational skills Sound decision making abilities and sense of initiative Ability to work with limited guidance in a fast paced environment Familiarity with Microsoft Office Eager to achieve and promote high standards Physically capable of lifting up to 30 lbs and standing for long periods of time Must be available to work days/evenings/weekends and holidays
